Dump in remaining ingredients, except pasta and simmer for about 1 hour.
Cook the pasta in a separate pot following the directions for al dente. About 7 minutes.
Add the pasta into the soup and let simmer for 5 more minutes. (I usually keep the pasta and the soup separate and combine in the bowls. Keeps the noodle from becoming over cooked when reheated).
Ladle into bowls and top with grated Italian Cheese
