The Best Soup Ever! Have You Tried It Yet?

Ingredients
  • 1 lb of Ground Beef
  • 2 Medium carrots, julienned (1¼ cup) (I use a bag of pre-cut matchstick carrots)
  • 1 Onion, diced (1¼ cup)
  • 4 Celery stalks, diced (1¼ cup)
  • 1 Teaspoon of garlic powder
  • 2 15-ounce cans of tomato sauce
  • 2 15-ounce cans of light red kidney beans (with liquid)
  • 1 15-ounce can of great northern beans (with liquid)
  • 16- ounces of V-8 Juice
  • 1 Tablespoon of white vinegar
  • 1½ Teaspoons salt
  • 1½ Teaspoons of chili powder
  • 1 Teaspoon dried oregano
  • 1 Teaspoon dried basil
  • ½ Teaspoon ground black pepper
  • ½ Teaspoon dried thyme
  • ½ Box of Ditalini pasta - prepared
  • Italian cheese
Instructions
  1. Brown the ground beef with ½ teaspoon of chili powder in a large pot over medium heat. Drain off most of the fat.
  2. Add carrot, celery, onion and garlic powder and sauté for about 15 minutes.
  3. Dump in remaining ingredients, except pasta and simmer for about 1 hour.
  4. Cook the pasta in a separate pot following the directions for al dente. About 7 minutes.
  5. Add the pasta into the soup and let simmer for 5 more minutes. (I usually keep the pasta and the soup separate and combine in the bowls. Keeps the noodle from becoming over cooked when reheated).
  6. Ladle into bowls and top with grated Italian Cheese
