Baked Chicken

I love princess House…Especially the Fantasia line. I have so many different pieces. Plates, bowls, tumblers, cups – but my favorite pieces are the Bake Serve & Store Casseroles aka “Miracle Dishes” I have a “Big Daddy”, 3 – 2qt Casseroles, and a 1 qt. Casserole. Some of these pieces are no longer available, but they have other pieces that will work just fine.

This is one of my regular Sunday Dinner Meals.  I take out my Big Daddy, and place a package of yellow rice mix in the bottom – no prepping the dish is needed. Then, I place a whole chicken on top of the rice.

 

 

Next, I loosen the skin, and then place some chucks of softened butter under the skin

 

 

 

Season with salt, pepper, dill, and garlic powder.

 

 

 

Top with carrots….

 

And potatoes, seasoning each “layer”.

Bake covered for several hours – I like the chickens with the pop-up thing-a-majiggy, that lets you know when the internal temperature is reached – for safe consumption.  I ten to cook it for a while longer, after the button has popped up.  I like the chicken to be fall off the bone, tender.

The juices from the chicken are all the liquid that is needed to cook the rice.  It will be a little “crunchy” along the edges, but my boys fight over the crunchy bits:-)

Sometimes, when the meal is completely cooked, I’ll place it on the stove top, remove the lid, and cover with a piece of foil.  I’ll flip the lid over, and use it to bake rolls, or biscuits…making this a truly – One Dish Meal.

 

Clean up is really easy too.  When I’ve removed all food from the dish, and it has completely cooled, I place the lid into the sink – upside down.  I fill it with warm water and soap, place the baking dish on top of the lid, and fill it with soap and water…I’ll also sprinkle in a little baking soda, or add a fabric softener sheer.  Let sit over night.  In the morning, I just dump out the water, scrape out any leftover bits of food with a plastic scraper, and then wash with a sponge.  Easy Peasy.
